WThis is a home-style take on a beverage from the seasonal menu. It's a large-volume prepared mix which is bursting with the essence associated with festive period, making it ideal for hosting a celebration. Reserve the remaining cordial for morning drinks, desserts, or for another batch of this cocktail.
Bikini Recipe
Serves 10 people
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Drink (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Syrup: Combine all the items into a pan, heat until it reaches a simmer, mixing to dissolve. Next, take off the heat and leave to cool down fully. Pour into a clean bottle, seal and store in the fridge, it can be stored for around a month.
To make Batch Mix: Mix all the spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then pass it through preferably using muslin, to ensure it's fully clarified.
To serve: Add 85ml from the batch mix to a mixing glass packed with ice, and stir gently for about 60 seconds to cool it down. Strain to a frosted cocktail glass or equivalent, garnish with some cranberries and complete it by giving it a brief mist of mandarin oil over the top.
